Quick & Nutritious Maple Cinnamon Granola


Did you know that it's super easy to make your own granola? Homemade granola gives you that warm, comforting, made-with-love feeling that store-bought granola just can't match. It takes just 35 minutes, and is made with simple, wholesome ingredients that nourish you. Plus, its gluten-free!


The perfect breakfast when paired with yogurt or milk and some fresh fruit!


This recipe makes about 5 cups of granola.

Ingredients
  • 2 cups gluten-free oat flakes / rolled oats
  • 1 cup chopped nuts and seeds of choice (ex. walnuts, pecans, pumpkin seeds)
  • 1/4 cup ground flaxseed (optional)
  • 1/4 cup melted coconut oil (you can use another oil like olive, but coconut has the most neutral taste)
  • 1/3 cup pure organic maple syrup
  • 1/4 cup coconut sugar or brown sugar
  • 2 tsp cinnamon (or more if you're a cinnamon lover!)
  • 1 tsp vanilla extract (optional)
  • 1/4 tsp of sea salt
Directions:
  1. Preheat oven to 325F
  2. In a mixing bowl, stir together the oats, chopped nuts, salt, and cinnamon.
  3. In a separate bowl, whisk together coconut oil, maple syrup, coconut/brown sugar, and vanilla extract until well combined.
  4. Pour the liquid mixture into the oat and nut mixture, stirring until evenly coated.
  5. Line a baking sheet with parchment paper or a silicone baking mat, then spread the granola onto it, pressing it firmly into place.
  6. Bake for 25 minutes, or until the top is lightly golden.
  7. Remove from the oven and let the granola cool completely before breaking apart.
  8. Store in a closed container (lasts around 2 weeks).
